Pet Ghost


Looking for a quick & easy spin on a Halloween treat?  These Pet Ghosts are a bit silly, but sweet.  You can find Wilton Candy Melts at most craft stores, and the Keebler Mini Graham Cracker Crusts at most Walmart stores.  The Peeps ghosts might take a little longer to find.

Halloween Dinner Ideas (semi sugar-free)



Back in the (long ago) day I had a houseful of 6 kids ready to tear out the door trick-or-treating right after getting home from school (yes - they do grow up!)  Those were 3-4 hours of stress - for both the kids, and my husband & I.  My husband taught middle school for over 20 years, and he was NOT a fan of Halloween (trust me, have you ever been at your local middle school on that day?)  

I really tried to tone it down a bit by having dinner at 5:00 pm on that day - even though the kids were already tearing through their treats from school.  It did help to have something they could help me make - especially if it fit in the "Halloween" category.

These ideas would have been fun to try... Most of them have very little sugar - because there will be enough of that when they come home from trick-or-treating.  Granted, some of them also are made from convenience foods - but it's days like this when you really need convenience foods, right?

Quickie Halloween Lunch

Halloween Ideas for the 'kid' in all of us...



This week I've been tied to my house (that's a hard thing for me)...  A few days ago I looked in the mirror and found one side of my face had "frozen" - and after a trip to the doctor, he informed me that I have Bell's Palsy.  Just in time for Halloween!  I have to keep my left eye taped shut, and I have to drink everything holding my lips shut around a straw.  I've joked with my kids & grandkids that I'm going to be a pirate for Halloween this year (aaaarrrrrggghhh!)  


So.  I have one good eye, and lots of downtime till this (hopefully) improves.  I've pulled a few ideas I've shelved from pretty brilliant creators I've stumbled across the past few months.  I've included links to the ones I could actually find.

Veggie Halloween Skeleton
Great way to get your goblins to eat something healthy...
Pumpkin Rice Krispy Treats
(Love the Tootsie Roll stem!)
Donut Hole, Nutella (or canned chocolate frosting),
stick pretzel, and chocolate sprinkles (or chopped nuts)

Great Pumpkin Week


 If I don't have Halloween ideas planned by the week BEFORE Halloween - I always shelve them in my "next year" file.  This year I won't be able to share Halloween with my sweet grandkids - so I'll share a few pumpkin ideas from years past.  


Check back, and I'll post a few great ideas I've stumbled upon as I've browsed the past few weeks (again - they will go in my "next year" file!)


Pumpkin is a hot item this week... and will continue to be on everyone's mind through Thanksgiving.  I LOVE anything pumpkin - it adds a rich color, dense texture, and an earthy FALL feel to anything.  These are a few of my favorite ways to slip it into recipes.

Autumn Crunch & Munch



Take care of the odds & ends of fall candy by adding a little white chocolate.  Mixing in some ‘healthy’ snacks with all that sugar just might help you feel justified in not throwing it all away.  Nice to bag up for friends & coworkers - and maybe leave a little container on your neighbor’s porch.


I am a firm believer that you can change any ingredient from “so-so” to “WOW” by helping it take a swim in melted white chocolate.  

Now I’m a Grandma, I’m enjoying keeping bowls of Halloween candy on my tables nowadays.  I feel that’s OK because that’s what OUR parents did to (unwittingly) turn our little ones into sugar deranged monsters this time of year.  I consider it SWEET payback.

But they’re off trick-or-treating in their own neighborhoods tonight, and I just couldn’t bring myself to throw what’s left away.  

The mixture of sweet/salty/crunchy/chewy is really pretty tasty.  See if you don’t agree...

Pre Trick-or-Treat Tummy Warmers



When my children were small, I remember trying to coerce them into having something nice and HOT before going out trick-or-treating on Halloween.  It rarely worked.  I remember trying Dinner-In-A-Pumpkin, and they just thought it was weird to bake something we had on our front porch all lit up with candles.  (Ring a bell with anyone?)

So, in the last few years (when I actually had children at home that were still that age) - I made finger foods that they could easily grab, eat, and then fly out the door.  I've posted lots of those earlier (check the "Halloween" posts in the categories, or do a custom search at the very bottom of this blog)


I found it was easier to have an early Halloween dinner (or a late lunch), with all those fun finger foods.  I then put on a few soups in the early afternoon for the adults to enjoy at their leisure later that night.  I even found the kids following their noses to the kitchen for soup - but only after lining up their "stash" of candy and conducting Wall Street-style candy trading with their siblings.

Chocolate Zucchini Cake w/Sour Cream Frosting



Last night my garden bit the dust - courtesy of the first frost.  There’s no better way to bid farewell to zucchini than with this moist, flavorful chocolate cake.  You could be entirely satisfied with it UN-frosted, but adding this creamy sour cream frosting brings it up several notches.  Delicious!

Some people watch TV for fun - I browse food blogs.  Less drama, more calories, and definitely more motivation.  It also breeds an insatiable desire in me to create and experiment.  
The web is a wonderful thing - it used to take YEARS to find recipes like this one, and I found it with one random click.  Of course, I had to alter it... (it’s in the genes)

Just a few notes on how this combination came to be:  
This is the perfect way to use up that frozen shredded zucchini that has developed a nasty ‘odor’under ice.  That enzyme/odor totally disappears with baking - but you’ll wonder about it as you place it in the oven.  I made it a second time with fresh zucchini - and I must say it turned out better using my old frozen squash from a year ago.

Next - you will wonder if you are changing your oil in the first few steps of this recipe.  Combining the oil and cocoa really resembles an oil slick - but no worries.  It turns out fabulous.  I changed a few steps in the recipe, which made it easier and less bother.

I also used a different frosting in place of the glaze.  (And since it's Halloween, I tinted it orange - perfect for this week)   The sour cream frosting was perfect (thanks Jamie!) and made just the right amount.  You could also choose to simply dust with powdered sugar if you wish, but that’s not nearly as fun.  I wish you could taste how moist this is...
