Frosty (the Cupcake)

My grandkids are just getting a good start on cabin fever about now, so I keep my eyes open for ideas to keep their parents sane.  I saw this in Family Fun, and thought it had great kid-appeal.  I got tired of bundling up so many snowmen, so I made snowdrifts out of the rest of the cupcakes.

It’s hard to believe that in just a few months I’ll be tuning up my air conditioner and leaving the windows open at night.  For now though, I’m having fun with snowman season.

I have a real thing for snowmen - just ask my kids.  I keep a S’More tree up till spring, and I pick up every S’More ornament I run across.

So - when I saw this idea using marshmallows, I had a little fun with it.  I’ve adapted the idea to my own list of supplies (of course, when don’t we adapt everything we make?)

The only tricky part is making a pure white frosting (so your snowman doesn’t appear to be sitting on yellow snow - yewwww...).  I hate frosting made with shortening, so I used half shortening / half butter.  It was acceptable, but if you’re a purist - be sure to go for the ‘pure-as-driven-snow’ version (shortening only).
