Which light do YOU see... red or GREEN?

An optimist is a person who sees a green light everywhere, while the pessimist sees only the red stop-light.
-Schweitzer, Albert
I had never thought of GREEN as positive...  but think about it.  Spring is the season when I feel the most positive - when new possibilities seem to be everywhere.  But my favorite season is Fall - what does THAT say about me, I wonder?
I found these recipes in my mailbox yesterday, and I thought they were some of the brightest green yet.
Thanks to Jen @ delightfuldelicacies, she describes her Avocado Key Lime Pie this way...

"Key Lime pie is a favorite of mine, although the best kind involves eggs, and lots of cream. This version however, has none of that, and it's healthier, and vegan, and delicious."
Check out her delicious site, and this recipe HERE.

Jen is also one of the authors of zupas.com.  She sent me the link for her Creamy Pesto - looks bright beneath that mozzarella-smothered tomato.  The recipe is HERE.
Thanks for all the wonderful green submissions - I'll post as many as I can during the sixteen days of GREEN...

  2. Barbara - saw you quoted in the newspaper this morning... You're amazing! I guess I'll have to be brave and try the "macaron" everyone raves about...
