Nacho "Cheesecake" - for your houseful of Olympics fans...


This appetizer (or meal-in-itself) is just right for watching the Olympics, Superbowl, March Madness - you name it...  Add your choice of toppings (avocados, tomatoes, green pepper, etc...) and it becomes a satisfying meal.  Great idea to serve when you have a houseful of sports enthusiasts.


I LOVE watching the Olympics - especially in winter.  I don’t feel guilty chilling on the couch this time of year because the yard is still permafrost and all the holiday hoop-la is finished.  It’s too early for spring cleaning (at least I think it is...) and everyone can usually stay home for the only legal holiday in February - President’s Day!  It can’t get better than this.

We like to snack on random things during the Olympics.  For instance - just last night we decided to make pancakes during the moguls.  Why?  Who knows - it just seemed to be the perfect thing to do.  

This is great on your plate as you are cheering from your couch.  This was made by Sherrie - who is one of my many terrific cooking friends.  She found it on tasteofhome.com.  It was absolutely delicious, and I was quite surprised to see that it was rated as “healthy” - but check out the *nutrition info at the bottom of the recipe and judge for yourself.  I had no idea it had chicken breast as an ingredient - and with the salsa, tomatoes, & avocados it could almost be a meal.
