Phony Rice-A-Roni - great side dish minus “the box”

It’s hard to find a person who hasn’t heard of “Rice-A-Roni” - the San Francisco Treat... And I’m SURE they closely guard their recipe! I used to buy it “for the kids” - but I secretly loved it myself! My daughter has told me for a long time that she makes her own - and now I do too. Give this a try - it’s quick, easy, and almost the real thing!

As I always do - I browse the internet for a basic idea of a recipe I’m looking for. This is the one I thought looked the most promising. It really turned out well (with a few changes - and the original link is HERE:) I've also included some "rice-a-roni trivia" at the end of my post on changeabletable.com (*see below)

At super-discount stores, you may be able to find packages of broken vermicelli. (I found one at Walmart for .25 cents!) The amounts should be very easy to reduce for one or two people, but the leftovers heat well in the microwave to serve with other meals later.

You'll find my version of the recipe, with photos and instructions at:
