Soft & Chewy Lemon Sugar Doodles - perfect...





A wonderful cross between snickerdoodles, lemon drops, and sugar cookies... Rolled in raw (turbinado) sugar - which adds an awesome crunch. Just chewy enough to keep your interest, yet not so dry that it sends you running for a glass of milk. Have I convinced you to try these?

Again - I've changed another recipe that looked promising... (link is included in the recipe post below) I used fresh lemon peel, and rolled mine in turbinado (raw) sugar for a satisfying crunch. I also didn’t find it necessary to use parchment paper - as there is enough butter in this cookie to allow it to easily release from most baking sheets. Just make sure you remove them while still warm so the sugar doesn’t stick.

You'll notice people will close their eyes and become very quiet as they try this cookie. I'm pretty sure that's a good sign...
