Peach Crumble - scale it down to serve just ONE...






A full size dessert can be discouraging to even THINK of making when you are cooking solo... This topping keeps well in a zippered bag in the refrigerator. Use a scoop or two over fresh or bottled fruit for a homestyle dessert with no leftovers. But after enjoying this crunchy, sweet dessert - you may wish you had made TWO...

The topping will “settle” into the fruit as it bakes, so don’t be stingy! I often make 1-1/2 times the recipe because I almost like it better than the fruit hiding underneath! It eliminates the need to add any sugar to the fruit, and thickens it in the process by seeping into the juices. It has just the right sweetness without being overpowering. I made this in these fun trifle cups for a dessert with Sunday dinner - my grandkids thought it was fun to have their “own special cup”... Next time I will make them one at a time as I need them - the extras are just too tempting!
