Red & Blue Cobbler - the slow cooker goes 'patriotic'



It’s hard to find a cobbler that actually works in a crockpot - one that doesn’t turn out almost like pudding.  You just might be pleasantly surprised that you can make your entire meal ‘oven free’ - including dessert.  


If you’re like me right now, it doesn’t take much to turn the kitchen into a furnace.  Summer is here in force, and the heat is on.  Meals are becoming more simple, and I’m careful to use my oven only when absolutely necessary.  You may consider this recipe if your kitchen feels like a sauna. 


I found this recipe in a past issue of Taste of Home magazine, and I really wasn’t expecting it to resemble traditional cobbler - after all, it’s pretty hard to make cake in a crockpot.  I was pleasantly surprised that it wasn’t a bad substitute for the real deal. 

With the 4th of July around the corner, the colors in this dish are perfect.  This is even more convenient because you can use fresh or frozen berries.


Just be sure to let it stand, uncovered, a full half hour before serving to allow it to “set up”.  

Delicious topped with a scoop of vanilla ice cream melting through the fruit.  (For a truly patriotic presentation, you will need the WHITE...)
