Blue-Bottom Cornbread - warm weather makeover for a cool weather favorite...
A main dish salad on a hot day is even better when you add cornbread on the side. But blueberries crowded into the bottom of the pan add a touch of summer to what is typically a winter bread. Lemon zest makes it delicious... I still prefer my standby recipe for plain cornbread in the cooler months - but this was fun for a change...
I was browsing for a more warm-weather-friendly version of cornbread, and ran across one on tastykitchen.com. It was made in a loaf pan, and seemed a little short on sugar - so I made a few changes and came up with this version. If you are crazy about blueberries - this is YOUR bread!
