Favorite Sunday Chicken & Rice - a rest from "charred" meat...





Well, after a week of non-stop BBQ - aren’t you ready for a meal you don’t have to stand over an open flame to prepare? When I’m ready to take a break from “fancy fare” I like to make a tried-and-true comfort food meal. My family knows I’ve had enough slaving in the kitchen when I make this old favorite. Nothing amazing, but it does smell heavenly when you're tired & hungry.

I do like BBQ’ed (‘er - charred) meat once Summer arrives - but I quickly reach my “limit” once the 4th of July passes... I guess it’s a lot like reaching your turkey threshold after Thanksgiving.

And once the thermometer teases the century mark, I am definitely through cooking outside and smelling like a campfire!

On a (rare) Sunday when none of my family decides to come to dinner, I take a little rest. That is when I make this Sunday comfort meal. It’s best with boneless, skinless, frozen chicken thighs - but bone-in chicken pieces also work well. Using frozen boneless chicken seems to take just the right amount of time to cook (about 3 hours) so it’s ready right as we walk in the door from church on Sunday. We enjoy dinner, and then move on to the most important part of the day - taking a NAP!
