Stuffed Mushrooms with Spinach & Bacon - not just for food snobs!

If you’re like me, you think of stuffed mushrooms as a “food-snob” recipe. That may have been the case in the past, but I enjoy them just because I like ALL the ingredients that go into them. And when you’re finished - you can have one or two for lunch, and feel like you’ve had a balanced meal in a compact package. I never could have gotten away with this when my children were small...
