Savory "Herbed" Potatoes & Carrots - and UN-stuffed Cabbage
St. Patty’s Day is a good excuse to serve potatoes & carrots in the same side dish. At our house, we also like steamed cabbage wedges (it takes days for the aroma to subside - but it’s worth it) We enjoy this with our favorite Corned Beef Brisket and everything else GREEN. What a random holiday!
This side dish can be baked in an open roaster pan, or (like we do) in a heavy covered dutch oven. When covered, the vegetables “steam” slightly. When roasted uncovered, they take on a richer flavor.
