Leprechaun Pie(s) (*or Grasshopper Pie the rest of the year!)

Much to the chagrin of my (now OLDER) children - I still like to make a completely GREEN dinner for St. Patrick’s Day every year. They usually tolerate it, complain a little, and move on. In spite of that, I tried this recipe for the upcoming holiday - and they actually gave their wholehearted approval! They informed me it's a “keeper”...

A refreshing, lightly flavored, minty GREEN dessert for St. Patrick’s Day (or ANY day). Smaller portions that keep well so it can be enjoyed over several days.
