Creamy Tomatillo Chicken *with Lemon Rice

Who says eating alone isn’t interesting? Sometimes it’s great to have (yet another) way to cook a chicken breast that is not the same ol’ thing...

If you tried the Fresh Creamy Tomatillo Dressing featured here last week, and you’re not in the mood for anything Tex-Mex - give this a try... This super-tender, moist chicken breast is wonderful with this mildly-tart creamy dressing added the last few minutes of cooking.
