Panko Crusted Baked Chicken Fingers

When you see the word "baked", don't think for a minute that this chicken is dry.  The prep might seem a bit tedious, and the ingredients not what you'd expect (egg white, mustard, thyme??)  These turn out fabulous - moist and tender.  Thanks to my neighbor Sherrie for sharing her recipe.
