Garden Sandwich Spread



This fresh tasting spread can double as an appetizer, or a great substitute for mayonnaise with your favorite sandwich ingredients. There are so many good things to choose to eat this time of year... and it’s good to have one that uses fresh vegetables - some of which you may already have growing in your garden.  


There are so many ways to use vegetables from a garden - so I tried to come up with a way to use them in a sandwich spread.  This turned out so much better than I expected - always a bonus!

Everything this time of year has mayonnaise as a main ingredient, and it’s delicious.  But I thought this was every bit as good, and it added a touch of freshness to a sandwich.

This is delicious on baguette slices or crackers - which makes an unusual appetizer for summer meals.  It would be easy to switch and/or substitute other vegetables you may have on hand.  Just be careful if they give off a lot of juice when you chop them.  Be sure to squeeze them as dry as possible before adding to the cream cheese base.
