Butternut Squash Soup w/Sage



With Thanksgiving tucked away till next year, this rich golden soup is perfect for those days between major holiday celebrations.  Fresh sage adds a wonderful flavor, and is beautiful as a garnish.  Served as a side with leftover turkey sandwiches, this soup thaws you out on a cold winter day.


It’s impossible to disguise turkey leftovers a few days after Thanksgiving, so I hide my turkey in sandwiches and bring out a great soup to go with it for dinner.

This is warm and comforting soup.  It stores well so you could also enjoy it over several days for lunch.  Delicious with warm rolls and a wintry apple salad.
