Day Three (of sixteen days of GREEN)



Today is a typical Utah spring day...  In other words, the pleasant sounds of birds & lawnmowers have given way to a strong wind whipping leaves everywhere with just enough rain to spoil a newly washed car.


In Utah we think we're so smart to claim the saying "if you don't like the weather in Utah, just wait a few minutes."  Actually - that belongs to Mark Twain, who said it this way:  "If you don't like the weather in New England, just wait a few minutes."   It doesn't matter where you live, spring weather is supposed to be CHANGEABLE.  After nothing but grey, white, and ice - we are ready for a change, don't you think?


Last night Valli of morethanburnttoast sent her link for this wonderfully healthy Ravioli with Spring Vegetables.  It made me crave something fresh and green after such a drab winter.  Here's how Valli describes it...


"This pasta dish creates a pesto-like sauce of frozen peas. This is an excellent way to rush Spring since fresh garden peas are not ready quite yet. I did say I was chomping at the bit!!!  The subtle Spring flavour of garden mint makes me want to eat this every day!!!!  Throw in some Spring vegetables like asparagus, snow peas or sugar snap peas and some tender baby spinach and you have a winner!!!"

It was also fun to hear from Jenny of pickypalate.com.  She has a mouth-watering site full of good things.  



She describes these Lucky Green Velvet Baby Cakes as a "ridiculously easy green dessert".  These moist little cupcakes are made with a yellow cake mix, vanilla pudding mix, and yogurt or sour cream.  She has swirled them with cream cheese frosting, then sprinkled them with an elegant gold pearl dust...  (Notice her awesome find - a 2-sided decorating bottle as well!)
