Potato Cheese Soup - almost as good as "Riley's" in a styrofoam cup...





There is a little malt shop called “Riley’s” in West Jordan, Utah (formerly “Malt Barn”) that makes killer Potato Cheese Soup. My husband and kids have always loved their malts, but the reason I stop by now is for this soup! A small styrofoam bowl, covered with melted cheese goes for $3.89 - and it’s worth every penny. Although this isn’t their secret recipe, I’ve made it for a few years now - and we think it’s pretty close...

I’m posting this at the request of my daughter - who makes her husband and three growing boys a hearty meal every night (no “chick” food at that house!) We make this every time the weather turns nasty and we get a craving for soup with staying power.

This soup thickens as it cools - so allow for this before serving, then re-warm just before ladling into bowls. If you serve it immediately after combining the cheese & vegetable mixtures - it may be significantly thinner than you wish.

  3. WOW!!! I am so happy I found your blog! I have been looking for a creamy cheesy soup but everyone I have tried have never turned out like mom used to make until this........... I have to say I fell head over heels for this recipe and now I know why your daughter wanted it so bad! Thank You! Thank You Thank You! This has been added to the boyfriends favorite meals!
