Creamy Skillet Mac 'n Cheese - an alternative to Kraft "cheese & macaroni"

Tired of trying to make lunch “interesting” for whomever happens to grace your kitchen on a summer day? Even MORE tired of making mac ‘n cheese (from a box) as you humor them by asking what they would like for lunch? Summer starting to get you down? Well - surprise them by actually making yet ANOTHER batch of Mac ‘n Cheese - but this time YOU will enjoy it with them! Start to finish - 20 minutes...

When I found this version of Macaroni & Cheese, it really seemed appealing to me for several reasons... Here they are (my conclusions about this recipe after actually MAKING it):

Turns out creamy without using Velveeta cheese.
The cheese melts evenly - no clumping, and not grainy.
No heavy cream or excess fat required - just evaporated milk.
Almost as fast to prepare as Kraft in a box...
Better tasting than the box version!
Made from start to finish in ONE pan (I used a deep skillet/wok)
NO draining hot water (and losing half the pan of macaroni in the sink).

After trying it, I was really impressed. Unless you are a dyed-in-the-wool Kraft “cheese & macaroni” (EXCLUSIVE) fan - you will probably prefer this version hands down!
