Cheaper Peepers Salad - it's all in a name?





With all the economic drama going on - most of us are tightening our belts lately when it comes to cooking (especially for a crowd). Pasta is a good choice for a satisfying salad - and it also works well for the summer BBQ’s that bring lots of hungry people together for a meal. We know this salad as “Frog Eye Salad” - but we have renamed it for hard times...

Who KNOWS where the original name (Frog Eye Salad) comes from - but it always brings about a look of astonishment from those who have never heard of it before. My father-in-law always told my children “Just think of how many frogs gave their lives so we could enjoy this salad”...

The Acini-de-Pepe pasta resembles large tapioca when cooked, which (in an active imagination) could resemble amphibian eyes - but it’s best to keep that in the back of your mind.

It makes a HUGE salad that works for reunions, family parties, vacations, etc. We like adding multi-colored marshmallows, and occasionally diced maraschino cherries to add a little interest to an otherwise bland appearance. And, if you are a coconut lover (which is not the case with most of my family members) - adding coconut mixes it up also. As long as you stir it before serving, it will keep at least 2 weeks refrigerated.

This is expected at most family gatherings - especially reunions. It works best to prepare the pasta & sauce the day before - then refrigerate it overnight before adding the non-dairy topping and marshmallows the next day.
