Mini Berry Pizzas - add a little personality to your dessert buffet!





Looking for a tasty little bite to serve at a shower or luncheon that has a little personality? A sugar cookie crust is no bother to make ahead and store until it’s time to assemble. Just before serving, it’s simple to spread with a light cheesecake mixture, add a little dab of fruit glaze, and top with fresh berries. These little gems add a bright splash of color to any dessert buffet...

I hosted a wedding shower last night for my nephew - and we had close to 50 people here in my little cottage... It’s amazing how many people are content to be here ( as long as there’s food that is...)

At the bottom of the shower invitation, we indicated that there would be “light refreshments”... That wording doesn’t get your guests too excited to come, and I wanted them not to leave disappointed - but I was committed to keep it “light” refreshments.

I set out trays of these - as well as lots of fresh veggies & dips, chips & salsa, and lemon water. I decided to remove the chairs from around my kitchen table and arrange the food there so they could walk around the outer edge in a circle to serve themselves. It was fun watching everyone congregate around the perimeter and “piece” on the food till it was almost gone.

It was easy to keep an eye on the table and make just enough of these mini berry pizzas to replace what we needed. After all was said and done, I didn’t have even one left over...
