Roast for Sunday dinner is almost a requirement at my house. The problem arises with how to use the leftovers. There is never quite enough to serve again, but too much to allow to go to waste. In this classic dish - it won’t matter how MUCH meat you use, as long as you can tell it is THERE. And, as always, anything covered in mashed potatoes (especially HOMEMADE) is a hit!
